Dutch Oven Potatoes
Use a 12 inch Dutch Oven
Ingredients:
1 lb bacon, cut into pieces
2 onions, diced
2 green peppers, diced
5 lbs of potatoes, peeled and sliced thinly
1 lb shredded cheddar cheese
Mushrooms (optional)
Procedure:
Fry bacon in Dutch oven
Add onions, peppers, mushrooms & sauté
Pour off excess grease
Add potatoes
Stir well to mix everything up
Put about 8 briquettes on the bottom of the oven, approx 14 on top
Cook 45 minutes (until potatoes are tender); don’t stir
Once cooked, add cheese on top and cook for an additional 5 minutes
