(Adapted from "We Still Kneed Dough" cookbook by the Singing Women of West Texas)
Ingredients:
2 tubes Ritz crackers
2 sticks margarine
2 Tbsp poppy seed
2 cans cream of chicken soup
1 pt sour cream
1 chicken (note: this just needs to be 2 lbs or so of chicken; you can use a whole cooked chicken or an equivalent amount of chicken thighs or breasts. Recommend that you use boneless parts as it cuts down on the trash at the campsite)
Before the campout:
Cook the chicken and freeze it
Put the ritz crackers in a zip lock bag and smash into small crumbs
At the campsite:
Mix crackers and poppy seed. Remove 1 cup for topping. Melt margarine and add to remaining crumbs and press into a baking dish (you can either use a separate dish to put in a camp over or Dutch oven, or cook directly in a Dutch oven). Mix soup (both cans), sour cream, and chicken. Pour over crumb mixture. Cover with topping. Bake at 350° for 40-50 minutes.
