Black-Eyed Pea Skillet

(Adapted from "We Still Kneed Dough" cookbook by the Singing Women of West Texas)

Ingredients:

1 lb lean ground beef

1 onion, chopped

1 green pepper, chopped

1 - 16oz can black-eyed peas, drained

1 - 16oz can diced tomatoes

1 tsp salt

1 tsp sugar

1/2 tsp pepper

Cornbread - cook in advance or bake according to directions at the campsite

Before the campout:

Brown the ground beef and freeze

Cook or buy cornbread (optional)

At the campsite:

Chop the onion and green pepper.  Brown beef, onion, and pepper together until veggies are tender.  Add remaining ingredients.  Bring to a boil, reduce heat and simmer 20 minutes, stirring often.  Serve with or over cornbread.
